Dry them thoroughly, toss them in enough oil to coat, and roast them in a single layer in a properly hot oven until they rattle on the tray. Season with salt before roasting but add delicate spices and herbs at the end, and eat them the same day, because they soften as they sit.

Crispy chickpeas are one of those things that look effortless online and come out of a home oven slightly leathery, a bit chewy, and frankly a disappointment to everyone who was promised a snack. The good news: almost every failure has the same few causes, and they are easy to fix.

## Start with dry chickpeas

Water is the enemy of crunch. A wet chickpea steams before it roasts, and steamed chickpeas go chewy rather than crisp.

- Drain tinned chickpeas well and rinse them.
- Spread them on a clean tea towel, then rub gently with another towel on top. Loose skins will come away; you can pick those off for extra crunch, or leave them if life is short.
- Let them sit uncovered for a while to air-dry. The drier they look, the better they will roast.

Home-cooked chickpeas work too, but cook them until just tender rather than very soft, and dry them in the same way.

## Oil: enough, not a bath

Toss the dried chickpeas in enough olive oil to give each one a light, shiny coat. Too little and they dry out and toughen instead of crisping. Too much and they sit in a puddle and go greasy. Use a bowl and your hands, then tip onto the tray.

## Heat and space

A properly hot oven is non-negotiable. A timid oven dries chickpeas into little pebbles without the crackly shell.

Spread them in a single layer with space between them. Crowding traps steam and you're back to chewy. Use two trays if you need to.

Shake the tray now and then so they colour evenly. The cues:

- They turn deep golden, with some darker spots.
- They rattle like dried beans when you shake the tray.
- One bitten in half is crunchy right through, not soft in the middle.

Taste one, carefully, before you decide they are done. Pulled too early, they will be crisp on the outside and soft within.

## When to season

- **Salt** before roasting, with the oil.
- **Robust spices** like smoked paprika, cumin or chilli flakes can go in before roasting too, though they can scorch if your oven runs hot. Watch the colour.
- **Delicate flavours** like fresh herbs, lemon zest, finely grated parmesan, or garlic powder go on as soon as they come out, while still hot and slightly oily so the seasoning sticks.

Some favourite finishes: lemon zest, flaky salt and black pepper; smoked paprika and a little cumin; rosemary fried briefly in the same oil; or chilli flakes and grated pecorino.

## Why they go soft afterwards

Even perfectly roasted chickpeas lose their crunch over time, especially once they meet the moisture of the air or, worse, a salad dressing. They are at their best within a few hours.

To make the crunch last a little longer:

- Let them cool completely on the tray, uncovered, before storing.
- Keep them in a container that isn't sealed airtight, or loosely covered.
- Revive softened chickpeas with a brief spell back in a hot oven.
- Add them to salads and soups at the very last moment, on top rather than tossed in.

## FAQ

### Can I make them in an air fryer?
Yes, and it works well. The same rules apply: dry them, coat lightly with oil, don't overcrowd, and shake the basket so they cook evenly.

### Can I fry them instead?
Shallow-frying dried chickpeas in olive oil gives a very crisp result and is quick, though it is messier. Drain on paper and salt straight away.

### What do I do with them?
Snack on them, scatter them over soups, salads, roast vegetables or a bowl of hummus, or pack them for a picnic. They are the crunch that many soft dishes are missing.
